"During the heating of plant oils especially cis-trans isomerisation and polymerisation of polyenoic fatty acids take place. Products of these reactions are undesirable for health and they negatively affect a quality of refined plant oils. The aim of this study was to compare the degree of cis-trans isomerisation and polymerisation of two types of sunflower oil varying in oleic acid content in the dependancy on time and temperature of isomerisation and on the original content of linoleic acid in oils. Oils were heated in an argon atmosphere at temperatures 200 ? 250 \u00B0C for a period 100 ? 170 hrs. Trans fatty acid content was determined by CGC/FID method, for polymer triacylglycerol determination GP-HPLC/ELSD method was used. The main products of laboratory performed isomerisation were cis,trans- and trans,cis-octadecadienoic acids.
