"Phytoestrogens belong to the group of polyphenols, which are produced by plant secondary metabolism. Estrogenic activity of these compounds may cause beneficial effects on human health. The sensitive analytical methods with low limits of detection are necessary for current research of isoflavones in biological fluids. In the present work, LC-MS/MS method for determination of isoflavones - daidzein, genistein, glycitein and metabolite equol, was developed and validated. The feeding experiment was carried out with dairy cattles, the influence of higher intake of isoflavones on the levels of these compounds in cows plasma, milk and dairy products was studied. The results showed that a soy-based diet significantly increased content of biologically potent equol in all analysed matrices. Therefore, milk and dairy products could be an alternative sources of this estrogenic metabolite, namely for the consumers who are not capable to convert it from the isoflavone precursors consumed in the diet."@en .
