Falsification of spread butter consists in substitution of milk fat by plant fat in concentration 70 ? 75 %, the rate of substitution can be estimated on the basis of average content of fatty acids ? butyric acid, caproic acid and methyl tetradecanoic and methyl hexadecanoic acids. Analysis of sterol fraction is decisive. In the case of falsification of Edam cheese situation is complicated: milk fat is fully substituted by plant fat which is low quality but together content of other components is changed, especially content of proteins and solid."@en .
