Oxygen diffusion to liquid fat or liquid part of fat is main process. The system of used antioxidants in fat emulsion has to agree with character of these systems. In emulsion it is possible to use antioxidants soluble in fats, also in water phase and their combinations. Antioxidants, which have surface activity as emulsifiers, are interesting. In this study the influence of antioxidants (ascorbic acid, ascorbyl palmitate, tocopherol and their combinations) on lipid oxidation in margarine emusions was determined."@en .
