The model fat blends contained different rate of structured fat (fully hydrogenated zero-erucic rapeseed oil) and liquid oil (sunflower oil). As the emulsifiers were used various monoacylglyceroles. Two methods of separation of the phases were used ? separation on porous plate (size of poruses 10-1 ? 100 \u03BCm) and separation by the centrifuge. In the solid and liquid phases was determined amount of emulsifier by the high temperature gas chromatography with flame-ionization detector. More effectively was separation on porous plate.
