"The Basidiomycete fungus Agaricus brasiliensis, a mushroom native to Brazil, has been widely used as health food in traditional medicine for prevention of cancer, diabetes, arterosclerosis and other diseases due to the presence of biologically active compounds in fruit bodies. Among such bioactive compounds specific β-glucans and their complexes with proteins and other polysaccharides could be important as immunomodulating agents. Branched glucans from A. brasiliensis are supposed to be responsible for some healthy properties of these mushrooms including anticarcinogenic and antimutagenic ones. This work was devoted to preparation and characterisation of polysaccharides from this fungus. Hot water and alkali soluble and alkali insoluble fractions were isolated from fruit bodies of A. brasiliensis by two step extraction procedure. Contents of dietary fibres, α- and β -glucans were determined by Megazyme enzymatic kits. Neutral sugars were analysed by total hydrolysis followed with GC. Th"@en . . .
