Two mixtures were investigated, one with benzaldehyde, the other with 3-phenyl-1-propanol. Model systems were prepared by mixing sodium hypochlorite water solution with these aroma compounds. Reaction mixtures were analyzed by solid phase micro extraction (SPME) and analyzed by GC-MS. Changes of concentrations of volatile flavor components were observed. Oxidation was found to be the main chemical reaction. Chlorination process was also involved. In model mixture with benzaldehyde, chloro- derivatives such as chlorobenzaldehyde or trichlorophenol were identified. In model mixture with 3-phenyl-1-propanol, chloro- derivatives of methylbenzene, vinylbenzene and ethylbenzene were detected. These chlorinated derivatives were all detected at trace levels. A real risk of contamination of natural or flavored drinks by these components is discussed."@en .
