"Production of baker#s yeast is carried out in bioreactor of big volume, in the first phase as batch process followed by fed-batch process. In the second phase the substrate is added to the bioreactor. The temperature dependence of biomass maximal growth rate is empirically known and the optimal cultivation temperature is known as well. As a heat is produced during the growth phase, it is necessary to cool the bioreactor. A mathematical model, that describes the biomass and substrate concentrations, and temperatures in the bioreactor and the cooling system, is presented in the article. The model is extended by control loops of temperature in the bioreactor (by flow rate of cooling water) and substrate concentration (by dosing of substrate). Different types of regulations are simulated and compared and according to the results of simulations the new control system is proposed."@en .
