Robinson], a native Andean plant cultivated for its tubers and medicinal infusions from leaves, is very rich in phenolic components with strong antioxidant activities. The major phenolic components are chlorogenic acid, caffeic acid and ferulic acid both, in the form of their esters and free. Total polyphenolics were estimated with Folin-Ciocalteau\u00B4s phenolic reagent spectrophotometrically in four parts of plant: tubers, caudexes, stems and leaves. The richest sources of polyphenolic antioxidants were caudexes (331,748 mg.kg-1 DM) and leaves (69,728 mg.kg-1 DM). Polyphenol contents in different organs in decreasing order were: caudexes > leaves > stems > tubers. But in comparison with potato tubers the yacon tubers are 3 - 10 times richer in polyphenolic antioxidants.
