Phenolic acids contents in yacon organs in decreasing order were caudexes > leaves > stem > tubers. Caudexes significantly differed from other plant organs regarding levels of phenolic acids with the highest phenolcar boxylic amounts. Contents in stem and tubers are nearly comparable. While chlorogenic acid is major constituent in caudexes and tubers, 3,5-dicaffeoylquinic acid prevails in leaves and their precursor caffeic acid in stem.
