These compounds are toxic: their contents should not exceed hygienic limits and are therefore carefully controlled. Predominantly histamine, tyramine, tryptamine, putrescine and cadaverine were routinely analysed by HPLC with fluorescence detection and an automatic precolumn derivatization with ortho-phthaldehyde in the presence of a borate buffer. The amines were isolated from beer samples in the new stationary phase Discovery DSC-MCAX and after a clean\u2013up procedure were washed with alkalized methanol (1% NaOH). 1,7-diaminoheptan was used as an internal standard to check the derivatization procedure.
