"Phytoestrogens of isoflavonoids nature are plant phytohormones with estrogenic activity that simulate biological effects of natural 17-\u03B2-estradiol and have further favorable impacts on human\u2019s health. An influence of malting barley and hop variety on phytoestrogens content in brewing raw materials was investigated. An influence of technological conditions of sweet wort, hopped wort , beer fermentation and colloidal stabilization on phytoestrogens looses were studied in brewing pilot trials. Important phytoestrogens - dainzein, genistein, formononetin and biochanin A were accessed. It was found out the selection of brewing raw materials, barley as well as hop is important for pfytoestrogens content in beer. Used brewing technology has significant impact on phytoestrogens looses in the course of beer brewing."@en .
