"The influences of different concentrations (0,033 ml/l-1, 0,067 ml/l-1, 0.1 ml/l-1) of an anaesthetic (clove oil) on organoleptic characteristics of fish meat from Nile tilapia (Oreochromis niloticus) were observed. We evaluated these characteristics smell, taste, smack, and consistence to the protocol. The Classification passed 3 times over during one day. On the evaluation alone participated ten examiners. At p < 0,05 the influence of the anaesthetic on smell wasn't statistically conclusive. The values of the control group (82,6 mm) were larger than that in the group with the concentration 0,033 ml.l-1 (67,3 mm), but there were lover than in the groups with the concentrations 0,067 ml.l-1 (107,3 mm) and 0,1 ml.l-1 (112mm). The best evaluation of taste obtained the control group (74 mm) By increasing the concentration of the anaesthetic in water, the values of the sensorial analysis slightly increased, but without any statistical demonstrativeness at p < 0,05.
