"In the Czech Republic, consumption of fish is very low compared to the EU average. At the same time, it belongs to the countries with the highest incidence of cardiovascular diseases. Sufficient intake of omega-3 polyunsaturated fatty acids (omega-3 PUFA) has been shown as an important preventive and therapeutic agent. Fish is the main source of the omega-3 PUFA in the human diet. There are several factors which influence the content of these acids in the fat and there are also several methods how to increase the omega-3 PUFA in the fish flesh. The aim of this methodology is to give a comprehensive overview of how to achieve a high level of omega-3 PUFA in fish as well as provide information concerning the proper handling and cooking of fish. The methodology is intended primarily for fish farmers and for companies engaged in fish processing."@en .
