"The experiment was focused on impact of different Silurus glanis culture to content, distribution and structure of fatty acids in fish flesh. The one group of fish was reared in warm water recirculation system on commercial feed mixture. The other group of fish was reared under usual technology in earth pond and natural food (control group). There are significantly higher (p < 0.05) values of polyunsaturated fatty acids in intensively reared group of wels (39.13% body part; 37.56% tail part). On the contrary, the muscle of extensively reared wels contains higher values of monounsaturated fatty acids (35.58% in body part; 36.02% in tail part). The muscle of intensively reared fish also contains higher value of eicosapentaenic acid - 4.56% in body part; 5.01% in tail part, extensively reared wels reached values 2.90% in body part; 2.84% in tail part.
