"The contribution deals with antifungal activities of group of thermostable proteins and peptides with a predominance of protease inhibitors recovered from potato fruit juice. Combination of high temperature (100\u00B0C) and pH adjustment was used for protein isolation. Isolated proteins were detected in the SDS-PAGE analysis on peptide gel in range 6-17 kDa. Two major signifcant bands were detected. Frst in 17 kDa area and second significant band was detected in area about 6,5 kDa. These proteins and peptides seem to be the major part of the isolated protein mixture. Different protein concentrations were applied to the three different fungal strains of Fusarium solani and two different phytopathogenic fungal strains of Fusarium oxysporum.
