"The content of free fatty acids (FFA) is an indicator of raw milk quality. Reference method of FFA determination is inappropriate for routine milk quality kontrol. The aim of this study was evaluated the suitability of the different infrared analyzers (FTIR, IR) for analyses FFA. At first it is necessary to calibrate these instruments according to the results of a reference method. Set of milk samples for this purpose has to content enough large range of FFA concentration. We prepare this range (0.56 \u2013 6.13 mmol 100g-1 fat) by mixing (mechanical stress) some samples and incorporating milk samples from the cows with malnutrition. The achieved results from three pilot calibrations show the possibility to use all tested instrument for screening milk samples with good quality, which are not damaged with lipolysis and the ability to differentionated them from milk with poor quality.
