Measuring was performed in periodical time sequences (one day after slaughter and after 14 days of ageing). To evaluate the influence of ageing on meat quality parameters, samples from Czech pied cattle was used (n = 258). Musculus longissimus lumborum et thoracis (sirloin) was analyzed. We found high influence of ageing on all measured parameters \u2013 especially texture of heat-modified samples. Strong correlation was found between texture of heat-modified samples and pH and also colour. The results shown that properly aged beef has better texture values and it could be expected, that consumer demand would increase if aged beef will be sold regularly.
