V prvej f\u00E1ze v\u00FDskumu sa zhodnotil biologick\u00FD materi\u00E1l a konzum\u00E1cie \u013Eanov\u00E9ho oleja. V semen\u00E1ch a v oleji vybran\u00FDch olejn\u00FDch odr\u00F4d (Raciol, Recital) \u013Eanu siateho (Linum usitatissimum L.) boli analyzovan\u00E9 obsahov\u00E9 l\u00E1tky. Anal\u00FDza percentu\u00E1lneho zast\u00FApenia mastn\u00FDch kysel\u00EDn bola realizovan\u00E1 pod\u013Ea normy \u010CSN EN ISO 5508 a anal\u00FDzy oleja sa uskuto\u010Dnili pod\u013Ea internej metodiky, ktor\u00E1 vych\u00E1dzala z normy \u010CSN EN ISO 659. Zisten\u00FD podiel tuku bol v \u013Eanov\u00FDch semen\u00E1ch v rozsahu 40,8 - 42,9 %. Z mastn\u00FDch kysel\u00EDn bol zisten\u00FD najvy\u0161\u0161\u00ED podiel polynenas\u00FDtenej mastnej kyseliny \u2013 kyseliny linol\u00E9novej, ktor\u00FD bol v semen\u00E1ch v rozsahu 37,1 - 61 % a v \u013Eanovom oleji 29,8 - 61,9 % (s vy\u0161\u0161\u00EDm obsahom pri odrode Recital). "Linseed oil is produced by oil seeds of Linum usitatissimum L. species, and has valuable nutritional composition. For this reason the clinical case study was prepared. The criteria for selection of probands were \u2013 gender, age, smoking habits, hormonal treatment and use of other nutritional supplements with content of omega-3 and omega-6 fatty acids. The first phase of research was evaluation of biological material and consumption of linseed oil according to managed schedule. In seeds and in an oil of two selected cultivars of flax (Recital and Raciol) were analysed contained substances. The percent representation of fatty acids in seeds was realized according to \u010CSN EN ISO 5508 norm, and analyses of oil were done by internal method modified according to \u010CSN EN ISO 659. Determined content of total fat in seeds varied from 40.8 to 42.9 %. The highest content, from polyunsaturated fatty acids, had alpha-linolenic acid in seeds (37.1 \u2013 61.0 %) and in oil (29.8 \u2013 61.9 %). The cultivar Recital had higher content than Raciol. Conversely the content of linoleic acid had cultivar Raciol. The content varied in seeds from 17.0 to 39.1 % and in oil 15.5 \u2013 39.8 %.
