"Bacillus species belong to one the dreaded health and technologically risky aerobic spore-forming bacteria occurring in various raw materials, foods and on producing facility. Bacilli can be detected relatively quickly with high reliability at the genus, species or strain level using different methods; including biological, instrumental and biochemical methods. In this work, bacilli, which were isolated from dairy products, raw materials and processing equipment, were identified at species level by means of the polymerase chain reaction (PCR) and the MALDI - TOF Mass Spectrometry (MALDI-TOF MS). The results of this study may be useful for quality assurance not only milk and dairy products, but in general for ensuring the hygiene level of the other food productions, using a proper detection of technologically risk microorganisms."@en .
