"The aim of this study was to detect and identify selected species of microorganisms occurring in white cheese and salt brine, in custody possible defects, by use of conventional PCR method. The PCR method was chosen because of ease of feasibility and low financing costs and was accompanied by a cultivation plate method. In investigated samples has not demonstrated the presence of predicted enterococci, bacilli or spores of C. tyrobutyricum, although the plate method confirmed the presence of Clostridium sp. by use of PCR method. The contamination of white cheeses and salty brines participated in other technologically risky microorganisms (apparently psychrotrophic bacteria, yeast or fungi with proteolytic or lipolytic activity due to odor), which will be the subject of further investigation, incl. extension of detection of uncultivated microorganisms."@en .
