"In this work was our attention focused to genus Bifidobacterium and its ability to ferment milk substrate enriched with bio-active plant substances. It was tested 15 strains of Bifidobacterium. Milk was enriched by omega-3 polyunsaturated fatty acids, evening primrose oil in dried form, soya milk, malt extract and wheat germs. Bacterial density, active acidity and content of organic acids were measured at fermented substrates. Sensory analysis was performed too. The addition of bioactive compounds had no inhibitory effect on the density of microorganisms, while in some cases there were an increase in levels of microorganisms compared to the milk substrate. Malt extract had a positive effect on the acidity and affect the ratio of lactic acid and acetic acid in lactic acid profit and improve the sensory properties of fermented milk"@en . . .
