"Undesirable enzymatic activities (proteolysis, lipolysis, decarboxylase activity) of B. cereus and B. licheniformis at 6, 12, 25 and 30 \u00B0C were tested by means of cultivation plate methods. 72 % of B. cereus strains produced these enzymes after cultivation 12 \u00B0C/6 days, but none of tested strains grew after 6 \u00B0C/21 days. Moreover, B. cereus spore density about 10 cfu/ml was sufficient to spoil milk stored at 12 \u00B0C. To prevent of heat-resistant spoilage enzymes, keeping of chilling chain and exerting the steps to prevent B. cereus species from milk contamination can be recommended. On the other hand B. licheniformis does not signify risk of spoilage under the chilling conditions. Formed biogenic amines, as detected by the screening plate method, were below the detection level of the ion-exchange chromatographic method in the milk samples, so they seem not to be a risk for dairy products."@en .
