The whey is a significant raw material containing a range of nutritional matters, which is possible industrial utilize. The fermentation of sweet way by the strains of lactic acid bacteria is one of these possibilities. Obtained lactic acid it can be polymerize on polylactate and used father for gel and folia production. In our work we aim on selection the most suitable strains from the Collection of dairy microorganisms for sweet way fermentation with order the highest quantity of produced lactic acid. At the same time we made comparison with a milk substrate. The differences between various substrates and in speed and deep of media souring were founded. The strain Lactobacillus helveticus CCDM 108 with the highest lactic acid production was chosen from the wide group of strains.
