"Two strains of contaminating microflora, Candida lusitaniae (yeast) and Prototheca zopfii (single-cell algae) were isolated and subsequently identified. From literature search results, that these microorganisms especially Prototheca zopfii are permanently object of the investigation. Referred microorganism belongs to mastitis pathogens, which can also cause the health problems in human population. Presence of yeasts in raw milk causes the problems to both the farmers and the processors. The methodic of experimental work with these microorganisms was created to prepare the milk with different concentration of microorganisms. The significant attention was given to biochemical changes in raw milk in association with the individual concentrations obtained above mentioned microorganisms cause by content microorganisms circa 1000/1 ml and more wide changes of milk composition and negatively influences its shelf life and technological applicability."@en .
