The ROflex Reflectometer and special kit of company Merck was employed for determination of lipase activity. In raw milk with native lipase content was disturbed the fat glubules and than it was observed the dependence of growing free fatty acids on the temperature and time of storing. Free fatty acids kontent is increased depending on higher temperature and longer storage time. Further was used commercial microbial lipase from genera Pseudomonas, it was addend into pasteurized and non-homogenized milk. The dependence free fatty acids kontent on the temperature and storing time, lipase content in the sample and on the quality of fat globules too, was demonstrated. It was estimated the native lipase doesn\u00B4t survive the temperature treatment 60 \u00B0C/10 min., whereas microbial lipase survives from 65 % probably."@en . . . .
