"Common cultivars of wheat (T. aestivum L.) have red colour of grain which is controlled by one to three dominant alleles R-A1a (on chromosome 3AL), R-B1b (on 3BL) and R-D1b (on 3DL); white grain is determined by recessive constitution of the alleles. Yellow colour is determined by a large spectrum of alleles responsible for biosynthetic pathways of enzyme phytoene synthase (on 7A, 7B, 5A), blue aleurone is determined by alleles Ba1 (on 4BS) and Ba2 (on 4A), purple pericarp by Pp1 (on 7B), Pp2 (on 7A), Pp3a, Pp3b (on 2A). The differences in grain colour are caused by the presence of polyphenols, tannins, anthocyanins and carotenoids. The overview of collected wheat donors with unusual grain colour and some of its typical characters are presented. In different kernel tissues there are different amounts of coloured substances that affect their content in the flour and meal and thus their content in bakery and biscuit products.
