"The main aim of this work was introduction of a method with sufficient extract efficiency for extraction of capsaicinoids from chilli. The main requirement was to fill up the principles of green analytical chemistry. For this reason, Pressurised Hot Water Extraction (PHWE) was chosen. As an extract reagent, hot water under high pressure was used. Firstly, optimisation of the extraction based on Central Composite Design was carried out. Then, individual real samples were analysed. Separation and identification of individual capsaicinoids were performed by using Reversed Phase High Performance Liquid Chromatography with Mass Spectrometry (RP-HPLC/MS).
