"In present work, possibilities of the analysis of free amino acids occurring in different honey samples by capillary zone electrophoresis with UV detection were investigated. Standard solutions of amino acids and sample solutions were pre-capillary derivatized by phenylisothiocyanate (PITC) derivative agent. A stability of prepared derivatives was verified in seven consecutive days. The best separation of phenylthiocarbamyl amino acids derivatives was achieved in 0.030 M phosphate buffer (pH = 7.40) containing 0.004 M beta-cyclodextrin.
