"The aim of this work was determination of deoxynivalenol (DON) in bakery and barley malt using method HPLC/UV/MS. Deoxynivalenol is one of the most frequently detected mycotoxin contaminants in grain and grain products from northern temperate regions, i.e. Europe and North America. It is a secondary metabolite produced by funghi from the Fusarium genus. The commission of the European communities appointed maximum levels for DON in unprocessed cereals on 1250 ?g/kg. All samples were analysed by HPLC/UV/MS. Before analysis, samples were extracted and cleaned up using immunoaffinity columns (IAC). In this study have been optimised conditions for the HPLC method, determined the effectivity of IAC, determined the value of the limit of quantification.
