"It follows from the presented results that amaranth in the diets used both in the form of grain and dried surface biomass is a source of nutrients in the diets comparable with the components of animal origin. Considering high biological value of amaranthprotein, favourable amino acid composition and dietary fibre content, it can be presumed that amaranth inclusion in diets for fattened pigs may partially, alternatively solve the problem of animal protein replacement in the feeds for monogastric animals.The relatively high content of lipids, favourable profile of fatty acids, particularly linoleic acid, and presence of squalen may be effective in the production of good quality pork with a more convenient fatty acid composition."@en .
