Probiotics (microbial population) and prebiotics (dietetic fibre) together create synbiotics, which are one of the rapid developing spheres in the food research. Passing the digestive tract the bacteries are exposed to the influence of several factors, which decreased their vitality. As the most important is reported the pH shock during the stomach passage and the bile acids influence in the small intestine. Selected microorganisms Lactoflora species of the collection were tested on their bile acids sensitivity in the presence of the barley extract with high proportion of beta-glucans. The bile acids presence in the cultivation medium influenced the prolongation of lag-phase and lowered the growth velocity according the microrganism type.
