Their list includes hulled wheat species - einkorn, emmer and spelt, hulless varieties of barley and oats, millet, foxtail millet, etc, and pseudocereals. In addition to these minor Eropean crops, so called new crops - amaranth and quinoa - are the objects of attention in mainly focused on the evaluation of their nutritional qualities and on the possibilities of utilizing the higher quality of their germinating seed for the construction of new, mainly dietetic and wholesome foods.
