Mthanol or 80% aqueous ethanol extracts from dried leaves and steam of the amaranth were prepared. Aliquoessed by evaporation into concentrate. These extracts and concentrates were added to rapeseed oil. The oxidation course at the temperatire of 70\u00B0C was followed gravimetrically. Low antioxidant effect of amaranth extracts and concentrates was found. Protection factors after addition of methanolic extracts or concentrates increased by 20-23% and by 38-51%, respectively. The effect of ethanolic amaranth extract on antioxidant activity was rather higher, protection factor increased by 61%. 10 samples of vegetable amaranth were analysed on total polyphenol content of total polyphenols ranged from 6,6 to 12,6 mg GAE/g of sample."@en . .
