"The results of pig carcass classification from 2005 to 2009 (totally 12 million carcasses) were analyzed. In 2005, of all slaughtered pigs, only 54 % carcasses were classified according to the SEUROP system. Over the 5 years period, this proportion increased to 79 % in 2009. The average carcass weight and lean meat content remain stable and range from 87 to 88 kg and from 55.6 to 56.4 %, respectively. The results of adult bovine carcass classification performed from 2005 to 2009 were evaluated. In young bulls and bulls, the most frequently used conformation and fatness classes were R and 2, respectively, while in cows and heifers, these were O and 2 together with 3, respectively.
