"We compare the growth intensity, carcass and meat composition of 5 bulls of eland antelope (Taurotragus oryx) and 5 bulls of Czech Fleckvieh cattle. The fattening was 2.5 times longer in eland than in cattle. Although, the carcass weight and dressing percentage were comparable, cattle had higher proportion of fat. The amount of meat from carcass (shoulder, rump) was also higher in cattle. The eland meat exceeded beef in low fat content and a high content of proteins.
