"A total of 80 carcasses of pigs coming from common production conditions in the Czech Republic were analysed. A probe device was used to determine the proportion of carcass muscle. Twenty-four hours post mortem, carcass analyses and subsequent detailed dissections of bellies with bones were performed. The average carcass muscle proportion, carcass weight, and muscle proportion in belly were 55.24%, 93.86 kg, and 53.37%, respectively. Different carcasses were divided into three weight groups. Among these groups, neither significant differences were found in the proportions of different parts of belly nor in the proportion of belly weight from carcass weight. The groups differed significantly in the proportion of muscle from belly with bones, intermuscular fat, and bones. The difference between the lightest and heaviest carcasses in the muscle proportion of belly with bones was particularly high and amounted to 4 %.
