"The objective of the study was to analyse the simplified dissection method used to determine the proportion of muscle in pig carcasses. Full and simplified dissections of 63 pig carcasses were performed 24 hours after slaughter. Both methods were employed to determine the proportion of muscle and the differences between these methods were calculated. The average weight of left carcass sides was 45.75 + 0.787 kg. The muscle proportion estimated on the basis of simplified dissections was 54.56+ 0.491 % while using full dissections it was 54.83+ 0.491 % and the difference was thus -0.27. These differences calculated for different hybrid combinations were +0.22, -0.33, and -0.88 for pigs sired by (DxPN), (HxPN), and BO, respectively. The differences calculated for carcasses classified in the same classification classes (SEUROP) were +0.33, -0.01, -0.52, and -0.71 for S, E, U, and R, respectively."@en .
