It is focused on results obtained from simplified dissections carried out in 132 carcasses in the Czech Republic. High correlation coefficients were found between carcass lean meatproportion and lean meat proportions in different cuts. In addition, the article refers to changes related to differences in carcass presentation as embodied in the legislation of CR and EU which may reduce carcass weight by approximately 2.60 %. The coefficients re-calculating warm carcass weight to live slaughter weight and cold carcass weight to live slaughter weight were proposed to increase from 1.23 to 1.26 and from 1.25 to 1.28, respectively."@en .
