"The aim of this study was to determine whether the set of cereals under study contained genotypes with higher values of nutritiously and for health beneficial substances for which they could be used in bakery technologies. The set comprised non-traditional varieties of spring and winter wheat with different grain color, emmer and spring barley genotypes of a hulless type with pale and dark grains. Interspecies and intervarietal differences in the content of nitrogenous substances, starch, volume weight, beta-glucans and mineral substances were determined. Results confirmed the possibility of using these non-traditional genotypes as sources for new formulas of cereal products which with their added value could enrich the current assortment.
