"The study was aimed on optimalization and evaluation of relations between centrifuge water absorption of a wheat flour and standard used farinograph water absorption. The prediction possibilities of these parameters by the help of NIR spectroscopy analysis were verified as well. Relations between CWA and farinograph water absorption showed high close correlation coefficient 0.97. A similarly close relation was detected between CWA application and NIR spectroscopy prediction. It\u2019s possible to accept the opinion that farinograph water absorption of a flour can be reliably predicted by CWA and NIR spectroscopy methods as well.
