The methods which can characterize cultivar identity, purity and trueness are very important for the quality of agricultural products and foods. The composition of storage proteins of cereal grain (prolamins, glutelins) and potato tuber protein is conditioned and fixed genetically by specific loci and this way the genotyp can be characterized . In addition the signal genes of storage proteins are linked in some cases with the genes of economically important properties and may also be the indirect markers of these traits. These facts are used mainly at wheat and barley. Using this criterion the variety can be characterized with high reliability. The gel electrophoresis of the mentioned proteins (SGE, PAGE, SDS-PAGE) is very suitable method for this purpose.
