These bacteria plae significant role in human nutrition, espetially as source of probiotics and in the possibility of utilisation on dairy industry. The selected strains will be study in detail, their biochemical, physiological and morphological characteristics will be described including the optimal conditions of cultivations and preservations. As well as the changes in their features during different usagein milk products will be studied. In many studies it was found that the classification of LAB is unsufficient and does not correspond to the real phylogentic relationships of different species and subspecies. Many molecular genetic methods were developed in the world during last years and they were used for the characterisation of many industrially important species of bacteria and yeasts.
