"The identification of proteinaceous binders in art works is necessary for their authentication as well as for the appropriate choice of the restoration technique. The methods of identification employed so far yield only rough results because extremely small amounts of samples, presence of ions from dominant inorganic materials, and ageing of the samples negatively affect the reliability of the proteins\u00B4 identification. Our proposal develops the identification of proteinaceous binders (egg yolk, egg white, whole egg, animal glues, bovine casein) in art works and historical mortars and plasters using proteomic techniques, namely the cleavage of proteins by specific enzymes and MALDI-TOF mass spectrometry. This approach will be tested on model samplesprepared after historical recipes, and afterwards applied to real samples. Preliminary results of our work have already been published in an international peer-reviewed journal and received considerable attention. It can be expected that the developed"@en . "."@en .
