Beta-glucans from mushrooms have been established as immunomodulators or they are active as anti-oxidants. The structural features of beta-glucans are important determinants of their physical properties and functionality. In frame of the proposal of this project, beta-glucans will be isolated from suitable strains of mushrooms (Agaricus brasiliensis, Pleurotus sp.) cultivated under defined conditions in solid state culture on natural substrates. The structure of different fruit-bodies will be characterized by polarizing microscopy. Isolated polysaccharide complex or beta-glucans will by analysed by common analytical methods and the content will be determined by enzymatic method.
