While usually used methods of study of microbial physiological state enable toevaluate an average physiological state of a whole population, the optical methods allow to describe individual cells and thus to enrich the evaluation of the microbial physiological state with a new factor, the statistical distribution of the selectedmarker within the population. The important strains in food industry, biotechnology and environmental technologies like thermophilic and lactic acid bacteria (genera Bacillus, Thermus, Lactobacillus, Lactococcus etc.) and yeast (genus Saccharomyces etc.)will be used as model micro organisms at these analyses. The results of the analyses will serve to the development of new models describing the dynamics of microbial populations.
