"Microbial \u201Esingle cell oils\u201C (SCO contain triacylglycerols (TAG) which are becoming potentially important sources of essential fatty acids (EFA). We shall analyze SCO obtained by cultivating algae, yeasts and bacteria in terms of the positional and optical isomerism, content and spectrum of double bonds, and hence chemical and nutritional properties. The analysis will include LC-MS/APCI (liquid chromatography-mass spectrometry/chemical ionization at atmospheric pressure) and LC-MS/ESI (electrospray ionization) with positive or negative ionization. This should results in (a) finding SCO potentially useful as EFA sources, and (b) finding SCO containing unusual fatty acids, especially nutritionally important unsaturated acids with 16 carbon atoms, both natural and prepared by a precursor-direct biosynthesis. Extremophilic microorganisms producing these PUFAs, which can serve as especially promising sources of these fatty acids, can thus become a valuable source of dietary EFA."@en .
