"The project is oriented to the development of methodology for the assesment of food-stuffs of animal origin concerning their falsification, with a special regard to biological and nutritional value and health safety of food. This system will be developedin accord with a food codex with regard to legislation and food inspection in the Czech Republic. The project will include a proposal for the development of method for the detection of components necessary check as the sources changing biological and n utritional value of food-stuffs and hazardous for health. One of the objektives of developing the methods is also the economic point of checking the food products which might be falsified. The project will include two parts: obtaining a database and development of detection methods for single components of animal products.
