dcterms:description
Anthocyanins belong to the group of plant polyphenols widely studied due to their positive effects on heath. The aim of the contribution is to study potentiality of CE/ESI-MSn for the analysis of anthocyanins in wine. Anthocyanins can migrate either as cations or anions, acid electrolytes (pH = 2) allow separation of common glycosylated anthocyanones. Recurrent collection of MS and MS2 (CID) spectra during CE run was arranged to extend analytical information obtained in one experiment.
