dcterms:description
For the last decade the electrodialysis (ED) is being intensively studied as a method suitable for reduction of the salt content in the milk whey. This is because ED is considered to be a method not affecting on the negative manner the properties of the milk whey, e.g. by application of the elevated temperature or chemical additives. One of the main disadvantages of the ED process consists in the relatively high electric energy demands. Therefore, the design of the ED unit has to be optimized in terms of maximal utilization of the applied electric current. This aspect is even more pronounced in the case of the ED process application in the milk whey demineralization. Its organic particles forming a gel film of continuously growing thickness. It deteriorates significantly the membrane transport properties leading to the ohmic drop increase. Moreover, the growing film also reduces the local channel cross-section area, thus affecting the flow hydrodynamics together with channel hydraulic resistance.
